Oh how I miss plates of food that look like that. I adored the food in Ethiopia. I’m not able to travel anymore, and have been thinking about trying my hand at making injera and some fasting dishes; to reminisce about times like that. Enjoy!

Its traditional Ethiopian food. The bottom is a big buckwheat pancake and then there are “fasting” dishes on top. Mostly lentil curry type stuff, spicy curry, spinach, and potatoes. It’s delicious but varies by location. http://en.wikipedia.org/wiki/Injera
Yeah,its been a fun food adventure. I tried some homemade beer the other morning in an Ari village. Bad move but luckily I was packing cipro. When were you here ?
